The holidays are just around the corner, so this is my delicious gift of health and wellness to all!
With these amazing, sinfully-delicious, nutrient-dense Gluten-Fre, Vegan Power Balls, you will not only avoid the guilty feeling, but rather, will be able to indulge your senses in sweet and savory, guilt free, delicious and nutritious meal, and without tipping off the scale!
2 cup mashed banana (about 6 bananas)
2 cup tri-color quinoa
½ cup Chia seeds
1 cup Hemp Seed
2 Tbs ground flaxseed
1 tsp salt
1 tsp ground cinnamon
1/2 cup coconut flakes
1/2 cup raw pumpkin seeds
1/2 cup raw sunflower seeds
1/2 walnuts or pecans
¼ cup local raw honey
1.5 cup applesauce
1/2 cup coconut oil
1 cup coconut water
Preheat oven to 350 degrees. Lightly grease a muffin tin (I use organic cold pressed coconut oil).
Combine quinoa, Chia seeds, raisins, and salt. Cook the quinoa like you would cook rice with plenty of water to maintain moisture.
Mix applesauce, mashed banana, nuts, flaxseed, and honey in a mixer add the cooked quinoa, and the rest of the ingredients to the mix. Keep mixing on low speed until a very moist and homogenous texture is achieved. If the mixture appears too dry, add some more apple sauce, and coconut water.
Fill each of the muffin cups to a heapping top with the quinoa mixture. Make sure to overfill it as quinoa will not rise.
Brush the tops with coconut oil.
Bake for 25 -35 minutes.
Let cool for 5 minutes, then enjoy!
Yiu can store the muffins in the refrigerator for up to a week, or in the freezer for longer. You may wrap each muffin individually and take it to work for a healthy, nutrient dense meal, or an after workout snack!
