Gluten-Free, Vegan, Banana Oatmeal Walnut Pancakes!

 

American breakfasts have become known for their ultra high content of saturated fats, sugars, and simple carbohydrates, but low on the essential nutrients. Today, I will offer you an equally delicious breakfast meal, but with a much denser nutritional value than most of their counterparts:

Banana Oatmeal Pancakes.

Ingredients (all organic and GMO-free):

3 organic ripe bananas
1 cup of gluten free oatmeal
1/2 a cup Chia Seeds
1/4 cup ground Golden Flax Seed
1 cup of apple sauce
1/2 cup chopped walnuts
1/2 cup raisins
Cashew Milk
Pink Himalayan salt to taste
Coconut oil.

Topping:
1 cup of frozen organic berry mix
Coconut Nectar or Raw Honey
Mango
Place the ripe bananas in a mixing bowl and purée them with a fork. Add the oatmeal, chia seeds, flaxseed, apple sauce, and a dash of salt. Mix all the ingredients with cashew milk to create a thick pancake batter. Add the raisins and walnuts and mix until the batter is uniform. Preheat a large pan with a bit of coconut oil. Scoop the batter on to the hot pan to create small round pancakes. Cook on high heat for a few minutes until golden brown, and flip. In a small sauce pan, heat up the frozen berries until they are warm to taste. If the mixture is not sweet enough for you, add a drop of coconut nectar or raw honey.
Place the pancakes on the serving plate, topping it off with the colorful berries. Add a sliced up mango, or another fruit of your choice as a side dish.
