Today I’ll share another delicious recipe with you which can be used for a delightful breakfast, brunch, or dinner – Sweet Potatoes, Veggie Deep Dish.
* All ingredients are vegan! gluten free, and 100% organic.
Sweet Potatoes – White or Red
Shredded tri-colored carrots
Sliced Baby Bella Mushrooms
Sautéed diced white onion
Sliced Red Bell Pepper
Vegan Cheese of your choice
Lime juice (1 lime)
Frozen banana chunks
Frozen pineapple chunks
Frozen green apple or/and pear chunks
Orange juice or a cashew nut milk
Combine all ingredients in a high speed blender, pour and enjoy!
Dice a small size onion and sauté it in coconut oil till golden brown. Set aside. Slice a large sweet potato and layer the slices on the pan, cover and cook for several minutes until golden and soft. Sprinkle with a dash of salt, pepper, and any additional spices of your choice. Spread the sautéed onions over the potatoes, and add all other shredded and sliced ingredients. Top it off with a vegan cheese of your choice, close the lid and cook on low heat for 10-15 min, and serve with a glass of a delicious green smoothie!
